Great cuisine is about simplicity. A clear broth simmered from kombu and dried flying fish, infused with the sweetness of turnips and the delicate aroma of Japanese leeks, leaving only the true flavors of the ingredients to shine. Following the rhythm of Japanese hot pot, from the appetizer to hot pot and finishing with Sanuki Tsurukoshi Udon, the seasonal flavors of the mountains and the sea are layered one upon another, allowing you to savor the abundance and umami of autumn's bounty.
