SHOKUZAI
Featuring premium ingredients such as top-grade Japanese Wagyu, Iberico de Bellota Pork, Native Chicken from Yulin, and Australian Wagyu Small Intestine, Kurogeya Honke presents the deliciousness of hot pot. As all the chosen ingredients come from the black-haired breeds, it inspired our brand name.
Deluxe Japanese Wagyu
Carefully sliced cuts suitable for hot pot cooking. With its beautiful pink color and marbled fat, it offers a perfect balance. When lightly cooked, it melts in your mouth, leaving a fresh and sweet aftertaste. It is the ultimate delicacy sought after by connoisseurs worldwide.
Iberico de Bellota Pork
Bellota represents the highest grade within Spanish Iberian pork. The pigs are raised on a diet of acorns and natural products for an extended period. The meat has a delicate texture and a nutty aroma, with rich and succulent fat.
Native Chicken from Yulin
We use Native Chicken from Yulin, a locally raised breed from Yunlin, Taiwan. It is carefully nurtured for about 2.5 times longer than regular chickens, resulting in a unique and delicious meat quality.
Australian Wagyu Small Intestine
Retaining the rich and flavorful outer fat, the small intestine infuses the broth with abundant collagen, making it sweeter. The texture of Wagyu small intestine is tender and chewy, making it a highly popular beauty-enhancing ingredient in Japan.
Hot Pot
NABE
Presenting four major hot pot dishes - Shabu-shabu, Sukiyaki, Hakata Mitzutaki, and Hakata Motsunabe. Experience the profound local customs of Japan, from the broth, meat, and vegetables to the ultimate delicacy.
Shabu-Shabu
Based on kelp, it is slow-cooked with the sweetness of kelp and bonito. Enjoy the purest flavors of the ingredients with our homemade special citrus vinegar sauce and black and white sesame sauce.
Sukiyaki
Incorporating a unique Japanese cooking method, it combines a Kansai-style searing technique followed by simmering. The first step involves searing the Wagyu slices to release the fat, which then flavors the broth along with the Kanto-style "Warigoma" sauce, resulting in a sweet and rich taste.
Hakata Mizutaki Hot Pot
A famous regional hot pot dish originating from Kyushu, Japan. The chicken bones are simmered for over six hours, creating a rich and collagen-infused white broth. It offers a warm and rich taste that is highly favored by women.
Hakata Motsunabe Hot Pot
A renowned regional hot pot dish from Kyushu, Japan. It features a rich white broth with plenty of cabbage, leeks, garlic slices, and chili. Combined with Wagyu small intestine, it becomes an aromatic and collagen-rich delicacy.
